Blueberry Muffins

INGREDIENTS:

  • 1 cup plain yogurt  
  • 1 large egg, lightly beaten 
  • 1/4 cup canola or corn oil 
  • 1/2 teaspoon pure vanilla extract 
  • 2 cups all-purpose flour  
  • 1/2 cup (100 grams) granulated white sugar  
  • 1 teaspoon baking powder  
  • 1/2 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 1 1/4 cups fresh or frozen blueberries  
Note: If using frozen blueberries, do not thaw before adding them to the batter

 
 
METHOD:

 
  • Preheat oven to 375 degrees F. Position rack in the center of oven. Butter or line 12 muffin cups with paper liners.  
  • In a bowl whisk together the yogurt, lightly beaten egg, oil, and vanilla extract.  
  • In another large bowl whisk together the flour, sugar, baking powder, baking soda, and salt. Remove 1 tablespoon of the dry ingredients and toss it with the blueberries. 
  • With a rubber spatula fold the wet ingredients into the dry ingredients and stir slowly until the ingredients are just combined 10 -15 stokes will be enough.  
  • Gently stir in the blueberries. Be careful not to break the berries or the batter will turn all blue. 
  • Evenly fill the muffin cups with the batter ,fill only 1/2 to 2/3 full. 
  • Place in the oven and bake for about 15 - 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Transfer to a wire rack and let cool for about 5 minutes before removing from pan

Vermicelli Upma


This is a very easy to make breakfast dish.

INGREDIENTS:

  • Vermicelli - 2 Cups
  • Water - 3 cups
  • Onions - 1 big sliced
  • Green Chillies - 4 (depending on your taste)
  • urud daal -2 tbs
  • Cumin seeds - 1/2 tbs
  • Curry leaves
  • mustard seeds -1/2 tbs
  • Diced carrots and Peas - 1/2 cup
  • Salt
  • Oil
For 1 cup of vermicelli you need 1.5cup of water



METHOD: 
  • Take a pan and heat it.Add vermicelli and fry it till light brown and keep it aside. 
  • Add 3 tsp oil into the pan .once the oil gets heated add cumin seeds,urud daal,mustard seeds and curry leaves .When all these are fried add veggie pieces and fry for 4 min and then add onions and green chilli pieces. stir it for another 5 min. 
  • Add 3 cups of water and place a lid on the pan and increase the heat to med- high ,add salt as per taste. After 5-8 minutes when the water starts boiling , add fried vermicelli and mix well and  reduce the heat to low and Leave it with lid for 5-8 minutes untill all the moisture in the upma is gone .

Banana Pancakes



Getting my son to eat something is a very big challenge. He has this very peculiar eating habit . he will not eat anything that has nuts,fruits,veggies and nothing even with chocolate chip.its all plain food for him.Should be one single color.No garnishing of any sort.If  I give him rice with some ghee he will eat it.
So now days i am just thinking of a way to get some fruits and veggies into his diet. That itself is a big challange for me!
One thing that he eats well is Pancake.So I started making this banana pancakes and fortunately he loves it! sometimes I let him decorate his Pancake into a face using chocolae chip for eyes and nose and a sliceof banana for the smile.He alwasy picks out the chip and gives it mommy!!
Oh no no! he loves chocolate just doesnt want it in his pancakes.
So here is the recipe for pancake. There is a simple version using the pancake mix and one from scratch. i will include both here. I usually make it using hungry jack's complete pancake mix.Its easier.

Using the MIX:-
Ingredients:


• 1 cup Hungry Jack  Buttermilk Complete Pancake & Waffle Mix (Just Add Water)

• 3/4 cup water

• 1/4 cup ripe mashed banana

• No-Stick Cooking Spray

Method:
Combine pancake mix, water and mashed banana. Mix just until large lumps disappear
Heat skillet over medium-high heat .Spray with no-stick cooking spray. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides.






This is the recipe for making it from scratch.
 
Ingredients:
1 cup all-purpose flour

1 tablespoon white sugar

2 teaspoons baking powder

1/4 teaspoon salt

1 egg, beaten

1 cup milk

2 tablespoons vegetable oil

2 ripe bananas, mashed


DIRECTIONS

Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.

Stir flour mixture into banana mixture; batter will be slightly lumpy.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
